The grapes are harvested by hand and subject to a rigorous choice at the entrance of the winery, and are expected to mature vigorously. After soft crushing and total destemming, the grapes are fermented in robotic wineries, with the quality constituents present in the films of the very ripe grapes being intended to pass gently into the wine.
