|Vinification||The grapes are stripped from the bunch and crushed in a fermentation vat. Fermentation takes 8 days inside a conical stainless steel vat at 25°C, with pumping over 4 or 5 times daily for 15 minutes|

Quinta do Quetzal is located in the heart of the Alentejo region on the slopes of Vidigueira. It is in the immediate vicinity of the oldest Roman winery of which there is record in the Iberian Peninsula. The microclimate and our hills create the ideal conditions for a unique terroir
