|Vinification||After careful selection the grapes are destemming with a slight crushing. After 48 hours of pre-fermentation cold maceration, fermentation took place in French oak vats and in stone tanks at controlled temperature of around 24ºC for 12 days|

Herdade do Rocim is a property located between Vidigueira and Cuba, in the Lower Alentejo, with about 120 hectares, among which 70 of vineyards and 10 of olive groves. The Vidigueira fault, a natural accident that marks the division between Alto and Baixo Alentejo, determines the reason for Vidigueira, the southernmost sub-region of Alentejo. The East-West escarpment, which is about 50 kilometers long, conditions Vidigueira's climate, making it, despite its southern location, one of the sub-regions with the temperate climate of the Alentejo
