If aged for more than three years and served at 10-12°C, it pairs well with poultry dishes or cured, spiced cheeses. <p>Quinta da Extrema Ensaios Extremes Touriga Nacional Red Wine is crafted from the finest parcels of Touriga Nacional grapes, situated at an altitude of 450 meters on transitional granite and slate soils. This unique positioning of the vineyards provides the grapes with optimal maturation and balance. The selection and harvesting of the grapes are done manually, ensuring that only the best are placed in 20 kg boxes for transportation. Once they reach the winery, the grapes undergo cold maceration for 48 hours in stainless steel tanks. The fermentation process then begins, lasting between 7 to 10 days at a controlled temperature of 23ºC. An integral part of the process is malolactic fermentation in new French oak barrels which contributes to the robust and complex flavor profile of the wine.</p>

<p></p><p>Quinta do Javali Maria Luisa White Wine presents golden colour resulting from the maceration process. Peculiar andchallenging nose. It has a strong aromatic intensity, with notes of fruit of very mature yellow flesh (quince), amplified by the skin maceration. Highlights include notes of caramelized orange peel, crystallized honey, dried fruits and slight earthy and resinous suggestions. To support this aromatic richness fruit of a terroir of excellence, there are harmonious sweet notes of the barrel used of high quality. In the mouth, it is surprising the “acid nerve”, which combines a remarkable acidic freshness with some admirable mature tannins, which migrated smoothly from the whole bunches, which began fermentation in a typical Douro “Lagar” (Yes, in a Lagar! !). <p></p><p>The story of Dow’s is unusual amongst all the great Port houses. It began in 1798 when Bruno da Silva, a Portuguese merchant from Oporto, made a journey which was the opposite to that of the first British merchants. The Port shipping business was continued by Bruno’s son, John da Silva who in 1862 brought into partnership Frederick William Cosens. With the continuing expansion of the firm, Edward da Silva and Frederick Cosens were joined by George Acheson Warre, whose well known family had been involved in the Port trade since its earliest years. In 1877, Silva &amp; Cosens merged with another leading Port company, Dow &amp; Co.</p> <p>Although smaller than Silva &amp; Cosens, Dow &amp; Co had become a very highly regarded Port producer with a particularly fine reputation for its Vintage Ports and when the two companies merged, it was decided to adopt DOW’S as the brand name</p> <p>For over two centuries the name of DOW has been associated with the finest Port from the vineyards of the Upper Douro Valley. Throughout the 20th Century and into the 21st, the Symington family has built on the legacy of the preceding Silva and Dow families.</p> <p>Dow’s attractive and distinctive drier finish is the recognisable hallmark of the wines from this great Port house.</p> <p></p> <p></p> <p></p>
