Quinta do Poço do Lobo Arinto & Chardonnay Brut, produced by Caves São João in Bairrada DOC, is crafted from a balanced blend of 45% Arinto and 55% Chardonnay. The grapes are delicately harvested—Chardonnay in late August and Arinto in mid-September—then gently pressed. Fermentation takes place in stainless steel at controlled temperatures for around 15 days, and following classic method secondary fermentation, the wine spends 18 to 36 months ageing on lees in the bottle, depending on vintage before dégorgement and release
