Tasting Notes
It presents an extraordinarily intense and complex aroma, with mineral notes of grapefruit and notes of well integrated and high quality oak. Surprisingly wide, full of volume, concentration and with a good acidity
Vinification
Destemmed and crushed, 12 hours pre-fermentation maceration; cold static clarification for 48 hours; selective yeast with temperature-controlled alcoholic fermentation (16-18ºC)
Ageing
Final third stage fermented in 300L French oak barrels (2nd and 3rd year old barrels); fermented with skin contact: batonnage for 9 months
